How to Make It

  1. In a medium saucepan, heat the olive oil over low heat. Add the chopped garlic and sauté for about 1 minute until fragrant.
  2. Add the halved red and yellow Datterini tomatoes. Cook for 2–3 minutes until they begin to soften and release their juices.
  3. Add the dry spaghetti or linguine to the pan. Then pour over the pre-boiled vegetable stock (or water). Season with salt and pepper, and add the chilli flakes if using. Give everything a good stir.
